Kitchari

2 cups Basmati Rice
2 cups Mung Dal (split yellow) soaked for 3 hours or overnight
6-7 cups water
2T ghee
2t turmeric powder
2t fennel powder
3t mustard seeds (omit for Pitta)
2t cumin powder
2t coriander powder
pinch of salt

Wash rice and mung dal separately in water.  Saute' the seeds in the ghee till they pop, then add the other spices.  Stir till combined. Add the mung dal, rice, and salt and saute' for 1-2 minutes.  Add 6 cups water and bring to a boil.  Boil for 5 minutes uncovered.  Then partially cover and simmer over medium-low heat, 25-35 minutes.  If you want to add vegetables, add half way through the cooking.  Add more water as necessary.  cook till rice and beans are soft.

suggested veggies include: carrots, green beans, asparagus, winter or summer squash.

Add salt to taste.  

Churnas

Churna means "powder" in Sanskrit.  They are mixtures of equal parts of a variety of spices

Vata Churna
Cumin, Ginger, Fenugreek, Turmeric, Hing (asafetida)

Pitta Churna
Coriander, Fennel, Cumin, Cardamom, Ginger, Turmeric, Cinnamon

Kapha Churna
​Ginger, Black Pepper, Coriander, Turmeric, Cinnamon

Spiced Apple Sauce

​Ingredients: 
1 cup apples
1/3 cup water
1t ghee
1/4 teaspoon each: cinnamon, ginger, and cardamom powder

Directions:
Cook apples in water until soft.  Add ghee and spices.
If you would like it sweeter, add 1 T raw sugar or maple syrup.

Roasted Root Vegetables

Ingredients: 
6 carrots cut in ½ inch rounds
1 rutabaga, peeled and cut into ½ inch cubes
1 turnip, peeled and cut into ½ inch cubes
1 medium onion, cut into chunks
2 garlic cloves, minced
3 T fresh rosemary, chopped
1 T fresh thyme, chopped
¼ cup olive oil

Directions:
Preheat oven to 375 degrees.
In a large bowl, combine all vegetables and herbs. 
Toss with olive oil. Spread vegetables in a large shallow pan and roast, stirring occasionally, for one hour or until tender. 
Season with salt and pepper.

Ayurvedic Gatorade

​Ingredients:
Pinch of raw sugar
Pinch of salt
Juice of ½ lime
1 cup water

Directions: 
Mix till sugar and salt are dissolved.
​Add lime juice and enjoy!

Watermelon Basil Smoothie

Ingredients:
1 Tablespoon chopped basil
2 Cups Fresh Watermelon

Directions:
Add chopped basil and watermelon in a blender, blend until pureed and serve.
